The type of empanadas we make are from a central state in Mexico called Hidalgo. They are direct descendants from Cornish pasties introduced in the 19th century by British miners and hence are baked, not fried.

They were tropicalized to meet the Mexican palate, so spices and chiles as flavors are common in the savory fillings. As for a sweeter tooth you’ll find anywhere from rice pudding to fruit fillings.
